Simple steps to sauce success . . .
Pour 3 tbsps of oil in a hot pan and then add the sauce.
Add 400grams of fish. Cook on a medium heat with the lid closed for 5 minutes.
Remove the lid and simmer, stirring regularly, until the fish is cooked and the sauce has thickened.
Sprinkle fresh coriander to garnish and serve with rice.

The spices in this sauce also combine perfectly with peppers, cauliflower, aubergine and potatoes to provide a tasty vegetarian option bursting with flavour.
