This Harissa Seasoning is a Taste of North Africa
Chicken Tagine (for 4 people)
? 4 chicken breasts, cut into large cubes
? 1 tbsp vegetable oil
? 1 onion, sliced
? 200ml water
? 100g dried apricots, chopped
? 50g sultanas
? 1 x 400g tin chopped tomatoes
? 1 x 400g tin chickpeas, rinsed, drained
Sprinkle the Harissa mix over the diced chicken breasts in a bowl and mix to ensure they are well covered. Preheat the oven to 180C/350F/Gas4.
Heat the oil in the base of a tagine dish, or heavy-based casserole dish. Fry the chicken for 2-3 minutes. Remove from the dish using a slotted spoon and set aside. Fry the onion for five minutes, or until soft. Add the meat back to the dish, along with water, apricots, sultanas, tomatoes and chickpeas. Bring to the boil, cover with a fitted lid, place in the oven and cook for 1 hour or until the meat is cooked
Serve with couscous or rice.
Optional :Top with yoghurt, and sprinkle over 2 tbsp of chopped mint or parsley and 25g of chopped almonds.
