This Piri Piri Seasoning is a Mildly Spiced and Fragrant Blend
? 4 to 6 skin-on chicken thighs and 4 to 6 drumsticks
? Jethro?s Piri Piri Seasoning
? Juice of 1/2 Lemon
? 1 tbsp oil
Combine the lemon juice, oil and Piri Piri mix together in a large bowl. Cut each piece of chicken 3 times and add the spice mix ensuring each chicken piece is fully coated. If time allows, cover and leave to marinate for 2 hours in the fridge. Heat oven to 200C/180C fan/gas mark 6. Arrange the chicken pieces skin-side up, in a roasting tin. Cook for 30 mins, then increase heat to 220C/200C fan/gas mark 7 and cook for a further 15 mins until the skin is crispy and golden and the chicken cooked.
Serve alongside rice or wedges and/or leaf salad
